Chithara Cashews is a leading cashew processor on the west coast of India, well known world over for its cashew crops and the unique taste of Mangalore cashews
The company has been in operation since 1997 and has grown over the years to make a name for itself in retail and wholesale markets for cashew kernels.
The Management
Lead by the dynamic Gopinath Kamath & his son Arjun Kamath and operating out of Brahmavara Taluk of Udupi district, the unit boasts of over 400 employees and has the capacity to process over 40 Tonnes of raw cashew nuts every month. We are processing the origins like Goa, Maharastra, Kerala, Benin, Tanzania, and Ghana.
Our Retail Foray
The company forayed into retail markets under the brand name CHITHARA to cater to the aspirations of its loyal customer base of wholesale customers who wanted to make our products reach retail markets under a credible brand name with the support of our company. Today we have launched 250g packs of retail cashew kernel packs that are well received in the retail markets.

Our Processing Plant
Our processing plant is located on the west coast of India near the arabian sea in the Brahmavara Taluk of Udupi district is famous for Indian cashew varieties exported to global markets. Our plant is equipped with the latest equipments and labour for processing cashew kernels to international standards of quality.
Processing Cashew Fruit (Drupes) into Kernels
Generally the processing of raw cashew nuts into edible cashew kernels takes the following steps (traditional method.
(i) roasting
(ii) shelling
(iii) drying
(iv) peeling
(v) grading
(vi) quality controls/fumigation
(vii) packaging.
In order to ensure the quality requirements and avoid contamination of the cashew nuts, preparation takes place under clean, hygienic, and ideal conditions. The following aspects are cleaned regularly: equipment (tubs, knives, etc.), working and drying surfaces (racks, mats, etc.), personnel clothes, and preparing and storage rooms.
All these steps have to be conducted with care to obtain good quality and good grade kernels.

Quality Assurance
Good Agricultural Practices (GAPs): which
provide growers guidelines and principles to apply for on-farm production and post-production processes to provide safety and healthy cashews, minimizing potential hazards, such as pathogens, contaminants, and pest management materials.
Good Manufacturing Practices (GMPs): which define procedures to be used in the processing, packaging, storing, and transport stages by handlers to ensure the quality of the product. GMPs are used by handlers to treat cashews under the best sanitary conditions.
Hazard Analysis Critical Control Point
(HACCP): which provides a systematic preventive approach to food safety that identifies, assesses, and controls the risk of biological, chemical, and physical hazards in production processes.
